POLLEN is proud to present a special collaboration with Huber’s Butchery to bring you Mr. Toriyama of The Toriyama Farm in Japan to host an exclusive 7-course Toriyama Umami Wagyu Dinner this August. The dinner menu specially crafted by Executive Chef Colin Buchan featuring five of the best cuts of grade A4 wagyu beef from the Japanese farm.

Executive Chef Colin Buchan

Along with Mr. Toriyama, Mr. Suzuki, commonly known as ‘Dr. Umami’ in Japan, will also be present to share his insights on wagyu meat. Mr Suzuki who had developed his own device to measure the level of umami in the meat by analysing four flavours, namely, sweetness, saltiness, acidity, and bitterness, will explain what makes Umami wagyu so special and different from the rest.
