Yamaguchi 山口 also known as the Western Kyoto in Japan is famous for its nature, Onsen (hot springs) and cuisine like Fugu (Blowfish) and Kawarasoba (Roof-tile noodle). In this Mine city of Yamaguchi, there is a pioneer sake brewery that produces high quality sake, Ohmine Junmai Daiginjo, and has been served at Michelin three star restaurants and top fashion parties.

 

 

Using the highest grade rice for sake brewing, ‘Yamada Nishiki’ from Yamaguchi and the water of ‘Benten pond’, one of the 100 elections of Japanese brand-name spring water is used as mother water, the sake tastes fruity and refreshing - resembles to Japanese white peach. And fourteen percent of the low alcohol content (14% alc vol) was realized by the additive-free method that is very difficult for sake.

 

In short, this premium Ohmine Junmai Daiginjo is best served chilled.
